- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup white granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups old-fashioned rolled oats
- 1/2 cup unsalted butter, softened (for filling)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 1–2 tablespoons milk (for filling)
Instructions
- Preheat your oven to 350°F (180°C).
- Cream together the softened butter, brown sugar, and white sugar until smooth and fluffy.
- Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
- Mix the flour, baking soda, salt, and ground cinnamon in a separate bowl. Gradually add this to the wet ingredients.
- Fold in the oats until evenly distributed, avoiding overmixing.
- Line your baking sheets with parchment paper and drop generous amounts of dough onto the sheets.
- Bake for about 12-15 minutes, until edges are lightly golden and centers look slightly underbaked.
- Prepare the filling by beating together the softened butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
- Spread the cream filling on one cookie and top with another, pressing gently to spread the filling.
Notes
For a healthier version, try using whole wheat flour and coconut sugar. Additionally, Greek yogurt can replace half of the butter in the filling.
