Instructions

  • Prep Ingredients: Dice potatoes, chop kale, mince garlic, and dice onion.

  • Cook Sausage: In a large pot, brown chicken or turkey sausage over medium heat. Remove and set aside.

  • Sauté Aromatics: Add butter or oil to the same pot; sauté onions and garlic until translucent.

  • Simmer Potatoes: Add chicken broth, potatoes, Italian seasoning, salt, and pepper. Bring to a boil, then simmer until potatoes are tender (10–15 minutes).

  • Add Sausage and Kale: Return cooked sausage to the pot and stir in kale. Cook 5 minutes until kale is wilted.

  • Add Cream: Reduce heat and stir in half-and-half or milk. Simmer gently 3–5 minutes.

  • Serve: Garnish with fresh parsley. Enjoy with crusty bread or flatbread for dipping.

Notes

Potatoes: Use Yukon Gold for creamy, tender chunks. Avoid russets for this soup.

Kale: Add near the end of cooking to prevent bitterness and maintain bright green color.

Creaminess: For richer soup, use half-and-half or heavy cream; for lighter, use whole milk or plant-based milk.

Flavor: Brown sausage first and layer seasonings gradually for a deeper, more balanced taste.
