A delicious and hearty alternative to traditional lasagna, packed with zucchini, ground turkey, and gooey cheese for a light yet satisfying meal.

- 3 medium zucchinis, thinly sliced
- 1 pound ground turkey
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cloves of garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Slice your zucchinis thinly using a mandoline or a sharp knife.
- Drizzle olive oil in a pan over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
- Add the ground turkey, breaking it apart. Season with salt, pepper, and Italian seasoning. Cook until browned.
- Combine ricotta cheese, egg, and a dash of salt and pepper in a bowl.
- Spread a layer of marinara sauce on the bottom of a 9×13-inch baking dish.
- Add a layer of sliced zucchini, followed by half of the ground turkey and dollops of the ricotta mixture. Top with mozzarella cheese.
- Repeat with another layer of marinara, zucchini, ground turkey, ricotta, and mozzarella.
- Finish with marinara sauce and remaining mozzarella and Parmesan cheese on top.
- Cover with foil and bake for about 25 minutes. Then, remove foil and bake for another 10-15 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before slicing.
Notes
Consider serving with a fresh salad or crusty garlic bread. You can substitute ground turkey with mushrooms or lentils for a vegetarian option.
