Instructions
- Start by prepping the zucchinis. Wash them thoroughly, then grate them using a box grater or a food processor. After grating, place the zucchini in a clean kitchen towel and squeeze out the excess moisture.
- In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, parsley, garlic, eggs, salt, black pepper, and onion powder if using. Use a spatula or your hands to mix everything until well combined.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Scoop about a tablespoon of the mixture and form it into small patties or bites, then place them on the prepared baking sheet.
- Drizzle with a little olive oil for crispiness.
