- 4 large eggs

- ½ teaspoon Italian seasoning (optional)
Instructions
- 1. Preheat your oven to 350°F and prepare a loaf pan with parchment paper or light oil coating.
- 2. In a large mixing bowl, whisk the eggs until light and slightly frothy to incorporate air.
- 3. Add Greek yogurt and apple cider vinegar to the eggs, stirring until completely smooth with no lumps.
- 4. In a separate bowl, combine almond flour, baking powder, salt, and any optional seasonings.
- 5. Gradually fold the dry ingredients into the wet mixture using a rubber spatula, mixing just until no dry pockets remain.
- 6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- 7. Tap the pan gently on the counter to release trapped air bubbles.
- 8. Bake for 45-55 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- 9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Store sliced bread in an airtight container at room temperature for 2-3 days, refrigerated for up to 1 week, or freeze individual slices for up to 3 months. Toast frozen slices directly from the freezer for best results.
