Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup brown rice (or jasmine rice)
  • 2 tablespoons olive oil (or avocado oil)
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 cups fresh spinach
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • Optional: Avocado slices, feta cheese or goat cheese, hot sauce

Instructions

  1. Start by cooking the rice. In a medium saucepan, combine 1 cup of brown rice with 2 cups of water and a pinch of salt. Bring it to a boil, then lower the heat, cover it, and let it simmer for about 30 minutes until tender.
  2. While the rice is cooking, prepare the chicken. Cut the chicken into bite-sized pieces. In a large skillet over medium heat, add the olive oil. Once the oil is hot, toss in the chicken along with minced garlic, paprika, cumin, salt, and pepper. Sauté for about 5-7 minutes until the chicken is browned and cooked through.
  3. After the chicken is cooked, add the chopped sweet potatoes to the skillet. Stir to combine, then cover for about 10 minutes or until the sweet potatoes are tender.
  4. Once the sweet potatoes are soft, fold in the chopped bell peppers and spinach. Cook everything together for another 3-4 minutes until the spinach has wilted.
  5. Before serving, fluff the rice with a fork. Spoon a generous serving of rice into each bowl, followed by the chicken and sweet potato mixture on top.
  6. Finally, garnish with fresh cilantro or parsley, and add optional toppings like avocado slices or cheese. Serve hot!
