Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in a separate bowl, then gradually incorporate into the wet ingredients.
- Fold in the white chocolate chips, dried cranberries, and chopped pistachios.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool the cookies on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
Notes
For gluten-free, substitute all-purpose flour with a 1:1 gluten-free flour blend. For a dairy-free option, use coconut oil instead of butter.
