Description

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 medium eggplant, peeled and diced
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh herbs (like parsley or basil), chopped (for garnish)
  • Hamburger buns (use whole grain buns for a healthier option)
  • Toppings like avocado, lettuce, tomato, and onion

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper, and roast for about 20 minutes.
  2. Combine the white beans and minced garlic in a large bowl, and mash until chunky.
  3. Mix in the roasted eggplant, breadcrumbs, Parmesan cheese (if using), oregano, smoked paprika, and any additional spices.
  4. Shape the mixture into burger patties.
  5. Heat remaining olive oil in a skillet and cook the patties for 5-6 minutes on each side until golden brown.
  6. Remove the patties from the skillet and let them rest for a few minutes.
  7. Assemble the burgers on buns with your desired toppings.

Notes

For a vegan version, omit the Parmesan cheese or replace it with a vegan cheese alternative. You can prepare the patties in advance and store them in the fridge for up to a day before cooking.
