- 1/2 cup fresh mint leaves, chopped

- 1 tablespoon lime zest
- 2 tablespoons honey or agave nectar
- 1/2 cup feta cheese, crumbled
- 1 cup cucumber, diced
- 1/4 teaspoon sea salt
Instructions
- 1. Cut the watermelon into uniform one-inch cubes and place in a large mixing bowl. Add diced cucumber.
- 2. In a small bowl, whisk together lime juice, lime zest, and honey until well combined.
- 3. Drizzle the lime dressing over the watermelon and cucumber mixture.
- 4. Add chopped fresh mint and gently toss all ingredients together, being careful not to break the watermelon.
- 5. Top with crumbled feta cheese and a pinch of sea salt.
- 6. Garnish with fresh mint sprigs and lime wheels before serving.
- 7. Serve immediately or chill for 15-30 minutes for best results.

For best results, prepare watermelon and cucumber up to 24 hours ahead and store separately. Add dressing, mint, and feta just before serving. Store any leftovers in an airtight container in the refrigerator for up to 4 hours. Drain excess liquid before serving if needed.
