Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 cup of jasmine or basmati rice
  • 1 cup of fresh pineapple chunks
  • 1 bell pepper (red or yellow), sliced
  • 1 cup of snap peas or broccoli florets
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • ¼ cup of low-sodium soy sauce
  • 2 tablespoons of honey or maple syrup
  • 1 tablespoon of sesame oil
  • 2 green onions, chopped, for garnish
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat, cilantro for garnish

Instructions

  1. Begin by cooking the rice. Rinse 1 cup of jasmine or basmati rice under cold water and combine it with 2 cups of water. Bring to a boil, then cover and simmer for about 15 minutes. Let it sit, covered, for an additional 5 minutes.
  2. While the rice is cooking, chop the chicken into bite-sized pieces and season lightly with salt and pepper. Heat 1 tablespoon of sesame oil in a skillet over medium-high heat and sauté the chicken for about 5 to 7 minutes until golden brown. Remove from pan.
  3. In the same skillet, sauté the minced garlic and grated ginger for about 30 seconds until fragrant. Then toss in the sliced bell pepper and snap peas or broccoli, stir-frying for an additional 4 to 5 minutes.
  4. Reintroduce the chicken to the skillet and pour in the soy sauce and honey. Stir well and add the fresh pineapple chunks, cooking for another 2 to 3 minutes.
  5. Fluff the cooked rice with a fork and serve it with the pineapple chicken mixture. Garnish with green onions and a sprinkle of red pepper flakes if desired.

Notes

Consider using pre-cooked chicken or instant rice to save time. For a vegetarian option, swap chicken for tofu and honey for maple syrup.
