Ingredients

  • 2 medium-sized acorn squashes
  • 1 pound ground turkey
  • 1 cup cooked quinoa or rice (your choice)
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers (any color)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • ½ cup shredded cheese (optional: cheddar or Monterey Jack)
  • Fresh parsley or cilantro for garnish
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the acorn squashes in half vertically, scoop out the seeds, and drizzle a little olive oil on the insides. Season them with salt and pepper, and place them face down on a baking sheet. Roast for about 25-30 minutes, or until tender.
  2. Heat a large skillet over medium heat. Add a splash of olive oil and sauté the chopped onion until translucent, about 3-5 minutes. Stir in the minced garlic and cook for another minute.
  3. Add the ground turkey to the skillet. Cook until browned and cooked through, about 7-10 minutes, seasoning with chili powder, cumin, salt, and pepper.
  4. Stir in the diced bell peppers, corn, and cooked quinoa or rice. Mix well and cook together for another 5 minutes.
  5. Flip the roasted squash halves over, spoon the turkey mixture into each half, and sprinkle cheese on top if using.
  6. Return the stuffed squash to the oven for an additional 10-15 minutes, or until the cheese is melted and golden. Let cool for a few minutes before serving.
  7. Garnish with fresh parsley or cilantro and serve warm.

Notes

Feel free to substitute ground turkey with ground beef or chicken, and quinoa with couscous or other grains. Consider additional protein sources like black beans or kidney beans.
