- 6 cups fresh or canned peaches, sliced
- 2 cups granulated sugar (divided)
- 3 cups all-purpose flour
- 1 cup unsalted butter, melted
- 2 cups whole milk
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- ½ teaspoon ground nutmeg
- 2 tablespoons lemon juice
Instructions
- 1. Preheat oven to 350°F. In a large bowl, combine peaches, 1 cup sugar, cinnamon, nutmeg, and lemon juice. Let macerate for 15 minutes.
- 2. In another bowl, whisk together flour, remaining 1 cup sugar, baking powder, and salt.
- 3. Add milk and vanilla extract to the dry ingredients, stirring until just combined to form a smooth batter.
- 4. Pour melted butter into a 9×13-inch baking dish, coating the bottom evenly.
- 5. Pour half the batter over the butter without stirring. Distribute the seasoned peaches evenly over the batter.
- 6. Pour the remaining batter over the peaches, again without stirring or mixing.
- 7. Bake for 50 to 60 minutes until the top is golden brown and the filling is bubbling around the edges.
- 8. Remove from oven and let cool for 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
Store covered at room temperature for 2 days or refrigerate for up to 5 days. Reheat in a 325°F oven for best results. Can be frozen for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend.
