A delightful Tomato Pie that combines fresh tomatoes, creamy cheese, and a buttery crust, reminiscent of classic deep-dish pizza.

- 2 ½ cups fresh tomatoes, sliced (preferably heirloom)
- 1 pre-made pie crust
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- ½ cup mayonnaise
- 2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: Sliced onions
- Optional: Crumbled feta cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your tomatoes by slicing and draining them in a colander for about 10 minutes.
- Combine the mozzarella, sharp cheddar, mayonnaise, garlic powder, and basil in a mixing bowl.
- Layer half of the sliced tomatoes into the pie crust and top with some cheese mixture. Add remaining tomatoes and cover with the rest of the cheese mixture.
- Sprinkle optional ingredients on top if using.
- Bake for 30 to 35 minutes.
- Allow the pie to cool for about 10 minutes before slicing.
Notes
For healthier alternatives, substitute Greek yogurt for mayonnaise or use a cauliflower crust for a gluten-free version.
