Description

A comforting and delicious baked dish featuring a flaky crust filled with juicy tomatoes, herbs, and melty cheese.


Ingredients

  • 1 pre-made pie crust or homemade pie crust
  • 4–6 large ripe tomatoes, sliced (preferably heirloom)
  • 1 cup shredded cheese (cheddar, mozzarella or a mix)
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried oregano
  • 2 teaspoons fresh basil, chopped (or 1 teaspoon dried)
  • Salt and pepper to taste
  • 1 onion, finely chopped (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out your homemade pie crust or fit the pre-made crust into your dish and prick the bottom with a fork.
  3. Layer the sliced tomatoes in the crust, sprinkling with salt and pepper over each layer.
  4. Combine the mayonnaise, Dijon mustard, oregano, and basil in a bowl until smooth.
  5. Spread the mayonnaise mixture evenly over the layered tomatoes.
  6. Sprinkle the shredded cheese on top.
  7. Place the pie in the preheated oven and bake for 45-50 minutes or until bubbly and golden brown.
  8. Allow to cool for at least 10 minutes before slicing.

Notes

For a healthier version, use lactose-free or vegan alternatives for cheese and mayonnaise.
