- 1 pre-made pie crust (store-bought or homemade)
- 3–4 large fresh tomatoes (ripe and juicy)
- 1 cup mozzarella cheese (shredded)
- 1 cup cheddar cheese (shredded)
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh basil leaves (for garnish)
- Optional: chopped green onions or garlic powder for added flavor
Instructions
- Preheat your oven to 350°F (175°C).
- Slice the fresh tomatoes into thin rounds and let them drain on a paper towel for about 10 minutes.
- Combine the shredded mozzarella and cheddar cheeses with mayonnaise, Dijon mustard, oregano, salt, and pepper in a mixing bowl.
- Spread a thin layer of the cheese mixture onto the bottom of the pie crust.
- Layer half of the tomato slices over the cheese mixture.
- Add another layer of the cheese mixture on top of the tomatoes, followed by the remaining tomato slices.
- Dollop the rest of the cheese mixture on top.
- Place the assembled pie in the preheated oven and bake for 35–40 minutes, or until the top is bubbly and golden brown.
- Allow it to cool for about 10 minutes before slicing. Serve warm, garnished with fresh basil leaves.
Notes
For a healthier version, swap mayonnaise for Greek yogurt and use whole grain or gluten-free pie crust.
