- 1 pound boneless, skinless chicken thighs or breasts
- 1/2 cup soy sauce (low-sodium recommended)
- 1/4 cup honey or brown sugar
- 1/4 cup rice vinegar or apple cider vinegar
- 2 tablespoons cornstarch (for thickening)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame seeds (for garnish)
- Green onions, chopped (for garnish)
Instructions
- Start by cutting your chicken into bite-sized pieces.
- In a medium bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, and grated ginger.
- Pour half of this mixture into a resealable bag with your chopped chicken, seal the bag, and massage the chicken to coat it well.
- Let it marinate in the fridge for at least 15 minutes or up to overnight.
- Heat a large skillet over medium-high heat, add the chicken (discarding the marinade), and sauté for about 5-7 minutes until golden brown and cooked through.
- Combine the remaining marinade with cornstarch in a small bowl.
- After the chicken is fully cooked, pour this mixture over the chicken in the skillet, stir well, and cook for 2-3 minutes until the sauce thickens.
- Once ready, serve the chicken warm and garnish with sesame seeds and chopped green onions.
Notes
Marinating the chicken overnight enhances flavor. Pair with white rice or steamed vegetables for a complete meal.
