- 2 pounds boneless, skinless chicken thighs
- 1/2 cup soy sauce (or tamari for gluten-free)
- 1/4 cup honey (or maple syrup for vegan)
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon sesame oil
- 1 tablespoon cornstarch (optional)
- 1/4 cup water
- Optional: sliced green onions and sesame seeds for garnish
Instructions
- Place the chicken thighs at the bottom of your slow cooker.
- Combine soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil in a bowl, whisking until mixed.
- Pour the sauce over the chicken thighs, ensuring they are fully submerged.
- Cover the slow cooker, setting it to low for 4-6 hours or high for 2-3 hours.
- Remove the chicken thighs and shred them with two forks.
- Return the shredded chicken to the slow cooker, stirring well to coat with sauce.
- Serve hot, garnished with sliced green onions and sesame seeds.
Notes
For a healthier alternative, serve with cauliflower rice or substitute chicken with firm tofu or jackfruit.
