- 12 jumbo pasta shells
- 1 pound ground beef (or turkey)
- 1 cup taco seasoning
- 1 1/2 cups salsa
- 1 cup refried beans
- 1 cup shredded cheddar cheese (or Mexican blend)
- 1/2 cup diced onions (optional)
- 1 cup sour cream (for serving)
- Fresh cilantro (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Bring a pot of salted water to a boil, then add the jumbo pasta shells and cook until al dente, about 8-10 minutes.
- Heat a skillet over medium-high heat, add the ground beef (or turkey), and cook until browned, breaking it apart as it cooks. Add onions if using.
- Drain any excess fat, then stir in the salsa and taco seasoning. Let simmer for a few minutes.
- Mix in the refried beans until well-combined.
- Drain the pasta shells and cool for a few minutes before stuffing each with the meat mixture.
- Arrange the stuffed shells in a baking dish. Pour remaining salsa over the top and sprinkle with cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes.
- Let cool for a few minutes before serving with sour cream and cilantro.
Notes
For a vegetarian option, substitute ground meat with black beans or lentils. You can also add more vegetables for extra nutrition.
