- 1 ½ cups all-purpose flour
- ⅓ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- ½ cup whole milk
- 1 teaspoon vanilla extract
- 3 cups vegetable oil for frying
- ¼ cup powdered sugar for dusting
Instructions
- 1. Wash and dice rhubarb into ½-inch pieces. Optionally toss with 1 tablespoon sugar and let sit for 15 minutes.
- 2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
- 3. In a separate bowl, beat eggs with milk and vanilla extract until smooth.
- 4. Pour wet ingredients into dry ingredients and stir gently until just combined. Don’t overmix.
- 5. Fold in the diced rhubarb pieces gently until evenly distributed throughout the batter.
- 6. Heat oil in a heavy-bottomed pot to 350-375°F, using a thermometer to monitor temperature.
- 7. Using two spoons, carefully drop spoonfuls of batter into hot oil, frying 3-4 fritters at a time.
- 8. Fry for 2-3 minutes per side until deep golden brown, turning once with a slotted spoon.
- 9. Remove fritters and drain on paper towels or a wire rack.
- 10. Dust generously with powdered sugar while still warm and serve immediately.
Notes
Store cooled fritters in an airtight container at room temperature for 1 day or refrigerated for up to 3 days. Freeze for up to 2 months. Reheat in a 350°F oven for 8-10 minutes to restore crispiness. Serve with maple syrup, honey, whipped cream, or vanilla ice cream.
