Ingredients

  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cinnamon
  • Optional: 1 tablespoon of chili flakes for extra heat

Instructions

  1. Start by washing your jalapeño peppers thoroughly. Slice them into rounds, ensuring you wear gloves while handling them.
  2. In a large pot, combine the granulated sugar, apple cider vinegar, garlic powder, onion powder, cayenne pepper, smoked paprika, and ground cinnamon. Stir the mixture over medium heat until the sugar dissolves and it comes to a gentle boil.
  3. Once boiling, add the sliced jalapeños to the pot. Ensure they’re well-coated in the syrup, then reduce the heat to low. Allow the mixture to simmer for about 30 minutes.
  4. After cooking, carefully remove the pot from heat and let it cool for a few minutes. Transfer the jalapeños along with the syrup into jars, ensuring the peppers are submerged in the syrup.
  5. Allow the cowboy candy to cool completely before sealing the jars. Refrigerate for at least 24 hours to enhance the flavors.

Notes

When handling jalapeños, always use gloves to avoid skin irritation. The sweetness can be adjusted with honey or maple syrup for a different flavor profile.
