Ingredients

  • 2 to 3 medium-sized beets (fresh or pre-cooked)
  • 1 cup apple cider vinegar
  • 1 cup water
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds (optional)
  • 1 garlic clove, smashed (optional)
  • Fresh dill sprigs (optional for flavor)

Instructions

  1. Begin by cooking your beets. If you’re using raw beets, wash them thoroughly to remove any dirt. Place them in a large pot, cover with water, and bring to a boil. Reduce the heat and simmer for about 30-40 minutes or until tender. If you’re using pre-cooked beets, simply slice them to your desired thickness.
  2. While the beets are cooking, prepare the pickling solution. In a medium-sized saucepan, combine the apple cider vinegar, water, sugar, salt, black peppercorns, mustard seeds, and, if you like, the coriander seeds and smashed garlic. Bring this mixture to a boil over medium heat, stirring until the sugar dissolves completely.
  3. Once your beets are cooked and tender, remove them from the heat and allow them to cool. Once cooled, peel the beets under running water (the skins should come off easily). Slice or chop the beets according to your preference.
  4. In a clean glass jar, layer the sliced beets and fresh dill (if using). Pour the hot pickling liquid over the beets, ensuring they are entirely submerged. Leave about an inch of space at the top of the jar.
  5. Seal the jar tightly and let it cool to room temperature before placing it in the refrigerator. These Sweet Refrigerator Pickled Beets can be enjoyed after a few hours but are best after sitting overnight.

Notes

These pickled beets can last up to 3 weeks in the refrigerator. Letting them sit overnight enhances the flavor.
