- 1 cup BBQ sauce (your favorite brand)

- 1 teaspoon minced garlic
- 1 teaspoon minced ginger (fresh or ground)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- Optional: chopped green onions and sesame seeds for garnish
Instructions
- Start by placing the chicken thighs at the bottom of the crockpot. Ensure they’re arranged in a single layer for even cooking.
- In a bowl, mix together the pineapple chunks, BBQ sauce, soy sauce, brown sugar, minced garlic, and minced ginger. Stir until well combined, and then pour this mixture over the chicken, ensuring each piece is coated.
- Toss in the sliced red and green bell peppers.
- Cover the crockpot and set it to cook. If you’re using the low setting, allow it to cook for about 240 to 360 minutes; if you’re crunched for time, set it on high for 120 to 180 minutes.
- Once done, check the chicken’s internal temperature—make sure it reaches 165°F.
- If desired, garnish with chopped green onions and a sprinkle of sesame seeds before serving.
Notes
You can replace chicken thighs with chicken breasts. Use homemade BBQ sauce for enhanced flavor.
