Description

Delicious, tender biscuits bursting with juicy blueberries, perfect for breakfast or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 cup fresh blueberries (or frozen, slightly thawed and drained)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together flour, baking powder, baking soda, salt and sugar in a large mixing bowl.
  3. Cut cold butter into the flour mixture until crumbly with pea-sized pieces.
  4. Create a well in the dry ingredients and pour in buttermilk and vanilla extract, gently stirring to combine.
  5. Fold in fresh blueberries, tossing with a tablespoon of flour first to prevent sinking.
  6. Turn the dough onto a floured surface and pat it into a rectangle, about an inch thick.
  7. Cut out biscuits with a cutter or knife and place on a lined baking sheet.
  8. Bake for 15-20 minutes until golden brown and firm.
  9. Remove from the oven and cool slightly before serving.

Notes

Serve warm with whipped cream, honey, or Greek yogurt. Avoid overmixing the dough for best results.
