Ingredients

  • 1 cup natural peanut butter (sugar-free)
  • 1/2 cup granulated erythritol or preferred sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • Optional: 1/2 cup sugar-free chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the natural peanut butter and granulated erythritol in a mixing bowl.
  3. Crack in one large egg and add the vanilla extract, mixing well.
  4. Add the baking soda and a pinch of salt, stirring until blended.
  5. Fold in any chocolate chips or nuts if using.
  6. Line a baking sheet with parchment paper and scoop tablespoon-sized portions onto it.
  7. Press down each cookie with the back of a fork to create crisscross patterns.
  8. Bake for 10-12 minutes until edges are golden brown and centers are slightly soft.

Notes

You can substitute peanut butter with almond butter or other nut butters for unique flavors. Ensure the peanut butter is sugar-free to maintain the recipe’s integrity.
