- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 bell peppers (red, green, or yellow), chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 cup cooked rice
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, or fresh herbs
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and cook for another minute. Stir in the ground beef or turkey, season, and brown the meat.
- Toss in the chopped bell peppers and stir well. Allow them to soften slightly for 3-4 minutes.
- Pour in the diced tomatoes with their juice and the broth. Stir in the Italian seasoning.
- Bring everything to a boil. Reduce heat and let it simmer uncovered for about 20 minutes, stirring occasionally.
- While the soup is cooking, prepare your rice separately. Stir in the cooked rice after simmering.
- Finally, taste and adjust seasoning as necessary. A splash of lemon juice can elevate the flavors.

For dietary preferences, substitute rice with cauliflower rice or use lentils for a vegetarian version.
