Description

Ingredients

  • 1 pound ground beef, turkey, or chicken (or a mix)
  • 1 cup uncooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes with juices
  • 1 cup bell peppers, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 cups beef broth or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional: 1 can (15 oz) black beans, drained and rinsed
  • Optional: Fresh parsley or cilantro for garnish

Instructions

  1. Prepare your ingredients by preheating your oven to 350°F (175°C) and chopping the peppers and onion.
  2. Sauté the onions in olive oil until translucent, then add the minced garlic.
  3. Brown the ground meat until no longer pink, adding spices as it cooks.
  4. Combine the rice, diced tomatoes, broth, and peppers, mixing well.
  5. Bake covered for 25 minutes, then add cheese and bake uncovered for an additional 5-10 minutes.
  6. Serve hot, garnished with fresh parsley or cilantro.
