Description

Ingredients

  • 1 pound boneless, skinless chicken thighs or chicken breast
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups corn (fresh, frozen, or canned, drained)
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/4 cup crumbled feta cheese or cotija cheese
  • Juice of 1 lime
  • 1 tablespoon chopped fresh cilantro or parsley
  • Chili powder, to taste
  • Avocado slices (optional)
  • Additional lime wedges (optional)
  • Sliced jalapeños (optional)

Instructions

  1. Start by marinating the chicken. In a bowl, mix the olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken thighs (or breasts) in the marinade and let them sit for at least 10 minutes for maximum flavor.
  2. While the chicken is marinating, prepare the street corn topping. In a medium bowl, combine the corn, mayonnaise, feta cheese, lime juice, chopped cilantro, and chili powder. Mix it all together until well combined.
  3. Heat a grill pan or non-stick skillet over medium-high heat. Once it’s hot, add the marinated chicken. Cook the chicken for about 5-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F. Allow the chicken to rest for a few minutes before slicing it into bite-sized pieces.
  4. While the chicken is resting, reheat the rice if needed. In serving bowls, start with a generous layer of rice.
  5. Top the rice with the sliced chicken and then spoon over the delicious street corn mixture.
  6. Lastly, garnish with avocado slices, an extra scoop of lime juice, or sliced jalapeños based on your preference.

Notes

Consider using quinoa or cauliflower rice as a low-carb substitution for traditional rice. For a vegetarian option, replace the chicken with grilled portobello mushrooms or tofu.
