Description

Vibrant Mexican-inspired bowls featuring seasoned chicken, charred street corn, cilantro lime rice, and fresh toppings for a healthy, flavorful meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1.5 cups uncooked white or brown rice
  • 3 cups fresh or frozen corn kernels
  • 3 tablespoons olive oil
  • 1/4 cup fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 2 teaspoons chili powder
  • 1.5 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, diced
  • 1 can (15 oz) black beans, drained
  • 1 medium jalapeño, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. 1. Combine chili powder, cumin, paprika, garlic powder, salt, and pepper. Coat chicken breasts with olive oil and seasoning mixture. Marinate for at least 30 minutes.
  2. 2. Cook rice according to package directions. Once cooked, fluff with fork and stir in 2 tablespoons lime juice, half the cilantro, and 1 tablespoon olive oil.
  3. 3. Heat a large skillet over high heat. Add corn kernels and char for 2-3 minutes without stirring, then toss and repeat until well-charred.
  4. 4. Mix mayonnaise, sour cream, remaining lime juice, and a pinch of chili powder. Toss charred corn with this mixture, cotija cheese, and remaining cilantro.
  5. 5. Grill, pan-sear, or bake chicken until internal temperature reaches 165°F. Let rest 5 minutes, then slice.
  6. 6. Assemble bowls with rice as base, topped with sliced chicken, street corn, black beans, tomatoes, red onion, and jalapeños if using. Garnish with extra cheese and cilantro.

Notes

Store components separately in airtight containers for up to 4 days. Reheat rice, chicken, and corn before adding fresh toppings. Can substitute feta for cotija cheese and quinoa for rice.
