- 4 cups fresh strawberries, hulled and halved
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch (optional, for thicker filling)
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 cup milk (dairy or non-dairy alternatives)
- 1 teaspoon cinnamon (optional)
- Ice cream or whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- Combine the strawberries, 1/2 cup of sugar, lemon juice, and vanilla extract in a large mixing bowl. If desired, add cornstarch and toss well. Let it sit.
- Whisk together the flour, remaining sugar (1/2 cup), baking powder, salt, and cinnamon in another bowl. Pour in melted butter and milk. Mix until just combined.
- Pour the strawberry mixture into the greased baking dish. Spoon the cobbler batter over the strawberries. It doesn’t need to cover everything perfectly.
- Bake for 30–35 minutes until the top is golden brown and a toothpick comes out clean.
- Allow the cobbler to cool slightly before serving. Enjoy it warm with ice cream or whipped cream on top.
Notes
For a vegan version, use almond or coconut milk and plant-based butter. For gluten-free, use almond flour or a gluten-free blend.
