Ingredients

  • 1 pound beef (flank or sirloin, thinly sliced)
  • 8 ounces egg noodles or rice noodles
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 green onions, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • ¼ cup soy sauce (low sodium preferred)
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (or your choice of cooking oil)
  • Optional: Chili flakes or sriracha for heat
  • Optional: Broccoli or snap peas for extra veggies

Instructions

  1. Begin by marinating your thinly sliced beef. In a bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar, and cornstarch to create a marinade. Add the sliced beef, ensuring every piece is well-coated. Let it marinate for at least 15 minutes; if you’re pressed for time, even a quick 5 minutes will do the trick.
  2. While the beef is soaking up those rich flavors, cook the noodles according to package instructions. Drain and set aside.
  3. Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once the oil is hot and shimmering, toss in the marinated beef. Cook it in batches if necessary to avoid overcrowding the pan. Stir-fry for about 3–4 minutes until it’s browned and just cooked through.
  4. With the beef cooked, remove it from the pan and set aside. In the same skillet, add a splash more oil if needed and throw in the minced garlic, ginger, and sliced bell peppers. Stir-fry for about 2–3 minutes until the peppers are vibrant and slightly tender.
  5. Next, add the cooked noodles back into the skillet along with the sticky beef you set aside. Drizzle with sesame oil and give everything a good toss to combine.
  6. Toss in the chopped green onions and any optional ingredients, like chili flakes, for a kick. Stir-fry for an additional minute or two until everything is heated through and coated in that glorious sauce.

Notes

For a low-carb option, swap out the noodles for spiralized zucchini or spaghetti squash. Use leaner cuts of meat for a healthier alternative.
