- 1.5 pounds boneless, skinless chicken thighs (or chicken breast)
- 1/4 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 2 teaspoons sriracha sauce (adjust to taste)
- 1 tablespoon honey or agave syrup
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Start by cutting your chicken thighs or breasts into bite-sized pieces, around 1-inch cubes.
- In a mixing bowl, combine the Greek yogurt, mayonnaise, sriracha, honey, soy sauce, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Whisk together until smooth.
- Toss the chicken pieces into the marinade, ensuring they’re well coated. Cover and refrigerate for at least 15 minutes.
- Preheat your grill or stovetop grill pan over medium-high heat. Soak wooden skewers in water for about 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers, leaving space between each piece.
- Place the skewers on the grill and cook for about 5-7 minutes on each side, until the chicken reaches an internal temperature of 165°F.
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
Notes
Serve on a vibrant platter with fresh cilantro or green onions, and pair with a refreshing cucumber salad or grilled corn.
