Description

Crisp, refreshing, and a little spicy, this Spicy Asian Cucumber Salad bursts with flavors.


Ingredients

  • 2 large cucumbers, sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1–2 teaspoons chili paste
  • 1 tablespoon honey or maple syrup
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds, toasted
  • Fresh cilantro, for garnish
  • A pinch of salt to taste

Instructions

  1. Start by washing your cucumbers thoroughly. Slice them into thin rounds.
  2. In a large mixing bowl, combine rice vinegar, soy sauce, sesame oil, chili paste, and honey or maple syrup.
  3. Toss the cucumber slices into the bowl with the dressing.
  4. Add the chopped green onions and sesame seeds to the bowl.
  5. Let the salad sit for about 10 minutes at room temperature.

Notes

For a crunchier texture, add shredded carrots or bell peppers. Make it vegan by using maple syrup instead of honey.
