Description

Ingredients

  • 6–8 fresh peaches (about 4 cups sliced) or 2–3 cans of sliced peaches (drained)
  • 1 cup granulated sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 1 teaspoon cinnamon (optional)
  • 1 tablespoon cornstarch (for thickening)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup milk (or buttermilk for richness)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the fresh peaches if using, and toss them in a bowl with sugar, vanilla extract, lemon juice, and cornstarch. Let the mixture sit for about 10 minutes.
  3. Mix the flour, baking powder, salt, and remaining sugar in another bowl.
  4. Pour in melted butter and milk to the dry ingredients. Stir gently until just combined.
  5. Pour half of the batter into a greased 9×13-inch baking dish.
  6. Spoon the peach mixture over the batter and drizzle any juices over it.
  7. Dollop the remaining batter over the peaches.
  8. Bake for 30-40 minutes until golden brown and bubbly.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream for a delightful contrast.
