A warm and hearty casserole that layers ground beef, black beans, cheese, and tortilla chips for a satisfying Southern comfort meal.

- 1 pound ground beef (or ground turkey)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups tortilla chips, crushed
- 1 cup corn (frozen or canned)
- 1 cup shredded cheddar cheese
- 1 cup sour cream (or Greek yogurt)
- 1 tablespoon taco seasoning
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F. In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks for 5-7 minutes.
- Drain any excess fat and stir in the taco seasoning, black beans, diced tomatoes, and corn. Let simmer for 5 minutes.
- Gather a baking dish and layer half of the crushed tortilla chips at the bottom.
- Distribute half of the ground beef mixture over the chips, then spread half of the sour cream and sprinkle half of the cheddar cheese on top.
- Repeat the layering with the remaining ingredients: crushed chips, beef mixture, sour cream, and cheese on top.
- Bake uncovered for 30-35 minutes or until the cheese is bubbly and golden. Optionally, broil for another 2-3 minutes for added browning.
- Remove from oven and let sit for 5-10 minutes to set before serving.
Notes
Can be made vegetarian by substituting ground beef with plant-based crumbles and adding more vegetables.
