Description

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt
  • ½ cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Combine the grated zucchini and melted coconut oil in a large mixing bowl.
  3. Add the granulated sugar and mix until fully incorporated, then beat in the eggs one at a time along with the vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack.
