- 14 oz smoked sausage, sliced
- 2 lbs baby potatoes, halved
- 2 medium bell peppers, diced
- 1 large yellow onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder

- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Preheat oven to 400°F and prepare a 9×13-inch baking dish or large sheet pan.
- 2. Wash and halve baby potatoes, dice bell peppers, slice onion, and cut sausage into 1/2-inch rounds.
- 3. In a large bowl, combine potatoes, sausage, peppers, and onions.
- 4. Drizzle olive oil over mixture and add garlic powder, paprika, oregano, salt, and pepper.
- 5. Toss everything thoroughly until evenly coated with oil and seasonings.
- 6. Spread mixture in a single layer on prepared pan.
- 7. Bake for 35-40 minutes, stirring halfway through, until potatoes are fork-tender and golden brown.
- 8. Remove from oven and garnish with fresh chopped parsley before serving.
Notes
