- 1 pound ground beef (or turkey)
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 onion, diced
- 1 bell pepper, diced (optional)
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Cooking oil for frying
- Salsa (optional topping)
- Sour cream (optional topping)
- Guacamole (optional topping)
- Fresh cilantro (optional topping)
- Jalapeños (optional topping)
Instructions
- Start by heating a tablespoon of cooking oil in a skillet over medium heat. Add in your diced onion and bell pepper. Sauté until softened, about 5 minutes.
- Next, toss in the minced garlic and cook for another minute. Then, add your ground beef (or turkey) along with the chili powder, smoked paprika, salt, and pepper. Cook until browned.
- Remove the beef mixture from the skillet and let it cool slightly. Wipe down the skillet and add a bit more oil.
- Place a tortilla in the skillet once the oil is hot. Sprinkle cheddar and Monterey Jack cheese over half of the tortilla, followed by a layer of your beef mixture. Fold the tortilla over to cover the filling.
- Cook for about 3-4 minutes on each side until golden brown and crispy.
- Once cooked, let the quesadilla sit for a minute before cutting it into wedges.
Notes
For lighter options, use ground turkey or chicken and low-fat cheese.
