Instructions
- Sear your beef chuck roast in a skillet over medium-high heat with olive oil. Transfer the roast to your slow cooker.
- Add sliced onions to the same skillet and cook until they soften, then stir in minced garlic before pouring the mixture over the roast.
- Include chopped carrots and celery, followed by beef broth, Worcestershire sauce, thyme, roasted paprika, and a sprinkle of salt and pepper.
- Stir to ensure the beef is partially submerged in the broth, then cover and set on low for 8 hours or high for about 4 hours.
- Remove the beef after cooking, let it rest for a few minutes, then slice against the grain.
- Use the remaining broth to make gravy by straining and simmering until reduced by half.
