Ingredients
4–6 chicken thighs (bone-in or boneless)
2 lemons (sliced thin)
4 garlic cloves (minced)
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
1 tsp dried rosemary
1 cup low-sodium chicken broth
2 tbsp olive oil
Instructions
Prepare the Ingredients: Season the chicken thighs with salt, pepper, thyme, and rosemary. Slice lemons and mince garlic.
Layer in Slow Cooker: Place vegetables or a small bed of onions (optional) at the bottom. Add chicken on top. Scatter garlic and lemon slices over the chicken.
Add Broth and Cook: Pour chicken broth around (not over) the chicken. Cover and cook on high for 3–4 hours or low for 6–7 hours.
Serve: Remove chicken carefully, garnish with fresh lemon zest or parsley, and serve with rice, quinoa, or roasted vegetables.
