Description

Easy sheet pan breakfast tacos loaded with eggs, sausage, cheese, and vegetables – perfect for meal prep and feeding a crowd with minimal effort.


Ingredients

  • 8 corn tortillas (6-inch)
  • 8 large eggs
  • 1 pound breakfast sausage, crumbled
  • 2 cups shredded cheddar cheese
  • 1 medium bell pepper, diced
  • 1 small yellow onion, diced
  • 1 cup fresh salsa
  • 1/4 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray

Instructions

  1. 1. Preheat oven to 375 degrees Fahrenheit and spray a large sheet pan with olive oil spray.
  2. 2. Brown the breakfast sausage in a skillet over medium-high heat for 7-10 minutes, breaking into crumbles. Remove and set aside.
  3. 3. In the same skillet, sauté diced bell pepper and onion until softened, about 5 minutes.
  4. 4. Whisk together eggs, heavy cream, garlic powder, salt, and black pepper in a large bowl until well combined.
  5. 5. Warm tortillas wrapped in damp paper towels in the microwave for 15 seconds to make them pliable.
  6. 6. Arrange tortillas on the prepared sheet pan in a single layer, slightly overlapping if needed.
  7. 7. Divide cooked sausage, peppers, and onions evenly among tortillas, placing down the center of each.
  8. 8. Sprinkle shredded cheddar cheese over the filling on each tortilla.
  9. 9. Carefully pour approximately 3 tablespoons of egg mixture over each filled tortilla.
  10. 10. Bake for 18-22 minutes until eggs are set and cheese is melted and bubbly.
  11. 11. Remove from oven and let cool for 2-3 minutes before serving.
  12. 12. Top with fresh salsa and your favorite toppings before enjoying.

Notes

Store leftover tacos in airtight containers in the refrigerator for up to 4 days. Reheat in microwave for 60-90 seconds or in oven at 325°F for 10-12 minutes. These tacos freeze well for up to 3 months when wrapped individually. Can be assembled the night before and baked fresh in the morning.
