- 1 pound of shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 cup shredded cabbage or lettuce
- 1 ripe avocado, sliced
- 1/2 cup diced tomatoes
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
- 1/4 cup diced red onion (optional)
- Spicy crema or salsa for drizzling (optional)
Instructions
- Start by marinating the shrimp in a medium mixing bowl with olive oil, lime juice, chili powder, cumin, garlic powder, paprika, and salt and pepper. Let sit for about 10 minutes.
- Prepare your toppings by chopping cabbage, dicing tomatoes, slicing avocado, and chopping cilantro. If using red onion, dice it as well.
- Preheat a large skillet over medium-high heat and cook the marinated shrimp for 2-3 minutes on each side until pink and opaque.
- Warm the tortillas in a skillet for about 30 seconds on each side or in the microwave covered with a damp towel for 20 seconds.
- Assemble your tacos: start with a tortilla, layer with shredded cabbage, cooked shrimp, avocado, tomatoes, and cilantro. Squeeze a lime wedge over the top.
Notes
Feel free to adjust spices for a milder flavor or swap shrimp for grilled vegetables for a vegetarian version.
