Description

A classic Louisiana dish featuring tender shrimp simmered in a rich, savory sauce served over fluffy rice.


Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • ¼ cup vegetable oil
  • ¼ cup all-purpose flour
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 stalks of celery, diced
  • 4 cloves garlic, minced
  • 2 cups seafood stock or chicken broth
  • 1 can (14.5 oz) diced tomatoes (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 green onions, sliced for garnish
  • Cooked white rice for serving

Instructions

  1. Start by heating the vegetable oil in a large saucepan over medium heat. Once hot, sift in the flour to make a roux. Stir continuously for about 15–20 minutes until it turns a beautiful caramel color.
  2. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until softened and fragrant.
  3. Stir in the minced garlic and cook for another minute until it releases its aroma. Then, add the seafood stock, followed by the diced tomatoes (if using), tomato paste, Cajun seasoning, Worcestershire sauce, salt, and pepper. Stir well to combine all ingredients.
  4. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for about 10 minutes.
  5. Carefully fold in the shrimp, cooking for another 5 minutes until they turn pink and are just cooked through.
  6. Remove the saucepan from heat and let it cool for a few minutes. Serve the shrimp étouffée over a generous scoop of white rice and garnish with sliced green onions.

Notes

For a vegetarian version, replace shrimp with mushrooms or firm tofu. For gluten-free, use gluten-free flour. Adjust spiciness by adding jalapeños or red pepper flakes.
