- 1 pound Italian sausage (mild or spicy)
- 2 large bell peppers (mixed colors), sliced
- 2 medium zucchini, sliced
- 1 large red onion, sliced
- 1 cup cherry tomatoes
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Heat a large skillet over medium-high heat. Add sausage and cook for 6-8 minutes until browned on all sides. Remove and set aside.
- 2. In the same skillet, add olive oil. Add sliced bell peppers and onions, cooking for 5-6 minutes until they begin to soften.
- 3. Add zucchini slices and cook for another 4-5 minutes, stirring occasionally.
- 4. Add cherry tomatoes and minced garlic, cooking for 2-3 minutes until tomatoes begin to burst.
- 5. Slice the sausage into rounds and return to the skillet. Add Italian seasoning, paprika, salt, and pepper.
- 6. Stir everything together and cook for 3-4 minutes until sausage is heated through and vegetables are tender-crisp.
- 7. Remove from heat, garnish with fresh parsley, and serve hot.
Notes
Store leftovers in airtight containers for up to 4 days. Reheat gently with a splash of water or broth. Serve over rice, pasta, or with crusty bread. Can be frozen for up to 3 months.
