Ingredients
8 large eggs
1 cup milk
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon smoked paprika (optional)
2 cups cooked chicken or turkey sausage, sliced
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
1 cup chopped bell peppers (any color)
1 cup chopped spinach
½ cup diced mushrooms
1 cup hash browns or diced potatoes (optional for a heartier casserole)
Fresh herbs for garnish (parsley, chives, or thyme)
Instructions
Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Prepare Sausage and Vegetables: Cook chicken or turkey sausage until lightly browned. Sauté bell peppers, mushrooms, and spinach until tender.
Mix Eggs: In a large bowl, whisk together eggs, milk, salt, pepper, and smoked paprika (if using).
Layer Ingredients:
Optional: Layer hash browns or diced potatoes on the bottom of the baking dish.
Add cooked sausage and vegetables evenly.
Pour egg mixture over all.
Sprinkle shredded cheddar and mozzarella on top.
Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10–15 minutes until the top is golden and eggs are set.
Garnish and Serve: Let the casserole cool slightly. Garnish with fresh herbs, slice, and serve warm.
Notes
Make-Ahead: Assemble the casserole the night before, refrigerate, and bake in the morning for a stress-free breakfast.
Freezing: Freeze the assembled casserole for up to 2 months. Thaw overnight or bake from frozen for 50–60 minutes at 375°F.
Prevent Sogginess: Sauté watery vegetables first and avoid overcrowding the dish.
Cheese Tips: Mix cheese into the eggs and sprinkle extra on top for a melty, golden crust.
Customize: Add seasonal veggies, plant-based sausage, or a sweet twist with caramelized onions or roasted squash.
Portions: Slice into individual servings for grab-and-go breakfasts or brunch.
