Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup of cream cheese, softened
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 1 cup of fresh spinach, chopped
  • 2 cloves of garlic, minced
  • 1 tsp of onion powder
  • 1 tsp of Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh herbs for garnish (like parsley or basil)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cream cheese, mozzarella, Parmesan, spinach, garlic, onion powder, Italian seasoning, salt, and pepper in a mixing bowl.
  3. Carefully create a pocket in each chicken breast with a sharp knife.
  4. Stuff each pocket with the cheese and spinach mixture.
  5. Heat the olive oil in an oven-safe skillet over medium heat and sear the stuffed chicken breasts for 2-3 minutes on each side.
  6. Transfer the skillet to the oven and bake for 25 minutes, or until the internal temperature reaches 165°F (75°C).

Notes

For a lighter version, consider using ricotta or dairy-free alternatives. Pair with garlic mashed potatoes or a fresh garden salad.
