Description

Tender sirloin steak marinated in fresh rosemary, garlic, and balsamic vinegar, then grilled to perfection with colorful bell peppers and onions. These flavorful kebabs are perfect for summer grilling or any time you crave restaurant-quality steak at home.

  • 2 pounds sirloin steak, cut into 1-inch cubes
  • 3 tablespoons fresh rosemary, chopped
  • 6 cloves garlic, minced
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 2 large bell peppers, cut into chunks
  • 1 large red onion, cut into chunks
  • 8–10 wooden or metal skewers

Instructions

  1. 1. In a large bowl, combine olive oil, balsamic vinegar, soy sauce, minced garlic, chopped rosemary, black pepper, and sea salt. Whisk until well combined.
  2. 2. Add steak cubes to the marinade and toss to coat evenly. Transfer to a zip-top bag or covered container and refrigerate for at least 2 hours or overnight for best results.
  3. 3. If using wooden skewers, soak them in water for 30 minutes before assembling.
  4. 4. Remove steak from refrigerator 30 minutes before grilling. Thread marinated steak cubes onto skewers, alternating with bell pepper and onion chunks, leaving small spaces between pieces.
  5. 5. Preheat grill to medium-high heat (400-450°F). Clean and oil the grates.
  6. 6. Place kebabs on the grill and cook for 3-4 minutes per side, rotating to achieve even char marks on all sides.
  7. 7. Cook for 10-12 minutes total, or until internal temperature reaches 130-135°F for medium-rare or 140-145°F for medium.
  8. 8. Remove from grill and let rest for 5 minutes before serving.

Notes

Store leftover kebabs in an airtight container in the refrigerator for up to 4 days. Remove meat from skewers before storing. Reheat in the oven at 350°F for 10 minutes covered with foil, or use in salads and wraps. For meal prep, marinate meat up to 24 hours in advance and assemble skewers ahead of time. These kebabs pair beautifully with rice pilaf, Greek salad, or grilled vegetables.
