Description

A creamy roasted garlic aioli that elevates any dish to gourmet status, perfect for dipping, spreading, or enhancing your meals.


Ingredients

  • 1 head of garlic
  • 1 large egg yolk (or 1 tablespoon of Dijon mustard for a no-egg version)
  • 1 cup of neutral oil (like canola or grapeseed)
  • Juice of 1 lemon
  • Salt to taste
  • Optional: freshly cracked pepper or herbs for extra flavor

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose individual cloves. Drizzle a little olive oil over the exposed cloves, then wrap the head in aluminum foil. Place it in the preheated oven and roast for about 30-35 minutes, until tender and caramelized.
  2. Once the garlic has cooled slightly, squeeze the roasted cloves out of their skins into a mixing bowl. Add your egg yolk (or mustard) and mash into a smooth paste.
  3. Drizzle the oil in slowly while whisking (or blending), creating an emulsion.
  4. Squeeze in the fresh lemon juice and sprinkle with salt. Taste and adjust the seasoning.
  5. Transfer your aioli to a serving bowl, and voilà! Enjoy your roasted garlic aioli.

Notes

Store leftover aioli in an airtight container in the fridge for about 1 week. Can be frozen in small portions for longer storage.
