Ingredients

- 4 cups of seedless watermelon, cubed
- 1 cup of cucumber, diced
- 1/2 cup of red onion, finely chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of fresh mint leaves, chopped
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar (or lime juice)
- Salt and pepper to taste
Instructions
- Start by washing your watermelon thoroughly, then slice it into quarters. Remove the rind and cube the flesh into bite-sized pieces; you should aim for about four cups of watermelon.
- Next, take your cucumber. Peel it if you desire, especially if you’re using a waxed variety, then dice it into small pieces.
- Chop the red onion finely. Adjust the amount based on your taste.
- Combine the cubed watermelon, diced cucumber, and chopped red onion in a large mixing bowl.
- Now, it’s time to add crumbled feta cheese; sprinkle it evenly over the salad mixture.
- For the dressing, whisk together olive oil and balsamic vinegar (or lime juice) in a small bowl.
- Pour the dressing over the salad, and gently toss everything to combine.
- Lastly, sprinkle chopped fresh mint over the top.
Notes
Serve in a hollowed-out watermelon for a fun presentation. Can be made ahead by prepping ingredients separately.
