Description

A vibrant, colorful salad with juicy peaches and fresh ingredients, perfect for a summer day.

Ingredients

Scale
  • 3 ripe peaches, sliced
  • 2 cups mixed greens (arugula, spinach, or your favorite)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled (or goat cheese for a different twist)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup almonds, sliced or chopped (substitutions: walnuts or pecans)
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons balsamic vinaigrette (store-bought or homemade)
  • Salt and pepper, to taste

Instructions

  1. Begin with the peaches. Wash them, slice, and remove the pits.
  2. Grab a large mixing bowl and toss in the mixed greens as your base.
  3. Add the sliced peaches on top, along with the halved cherry tomatoes.
  4. Sprinkle the red onion slices over the top.
  5. Now, add your choice of cheese.
  6. Toss in the sliced or chopped almonds.
  7. Gently fold in the fresh basil leaves.
  8. Drizzle with balsamic vinaigrette and season with salt and pepper.
  9. For the final touch, adjust seasoning if necessary.

Notes

Serve fresh for the best taste. Make ahead and keep the dressing separate for optimal flavor.
