Description

Buttery oatmeal crumble layers sandwiching a sweet-tart raspberry filling create these irresistible bars perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ cups old-fashioned rolled oats
  • ¾ cup light brown sugar
  • ¾ cup unsalted butter, cold and cubed
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 ½ cups fresh or frozen raspberries
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Preheat oven to 350°F. Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. 2. In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized pieces.
  3. 3. In a separate bowl, gently combine raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract until berries are evenly coated.
  4. 4. Press two-thirds of the oat mixture firmly into the bottom of the prepared pan, creating an even, compact layer.
  5. 5. Spread raspberry filling evenly over the base, leaving a small border around the edges.
  6. 6. Sprinkle remaining oat mixture over the raspberry layer, creating a rustic crumble topping.
  7. 7. Bake for 40-45 minutes until the top is golden brown and filling is bubbling around the edges.
  8. 8. Allow to cool completely in the pan for at least 2 hours before lifting out using parchment overhang and cutting into squares.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. Freeze individual wrapped bars for up to 3 months. Serve at room temperature or warm slightly before serving. Pairs wonderfully with vanilla ice cream or whipped cream.
